Blueberry crumble bar



Ingredients

Yields 5.5" x 5.5"

Crust:

  • 150g all purpose flour
  • 32g powdered sugar
  • 80g butter, melted

Filling:

  • 200g blueberries
  • 18g sugar
  • 1tsp lemon juice
  • 1tsp corn starch

Steps

Make the crust
  1. Mix together flour, powdered sugar and salt, then add melted butter
  2. Mix until a crumbly dough is formed
  3. Take 2/3 of the dough and press it down on the cake pan
Make the filling
  1. Mix the blueberries, sugar, lemon juice, and corn starch together in a bowl
  2. Place them evenly over the crust
  3. Sprinkle the remaining crust crumbles on top
  4. Bake at 380°F for 35 minutes


Comments
  • First try: we added 150g of blueberries and it can have more fruity and sour flavors. Updated the recipe to 200g blueberries
  • The crumbles on top can be slightly smaller to avoid burning
