Ingredients
Tangzhong ingredients
- Water 100g
- Bread flour 20g
Remaining ingredients
Add in the order listed
- Soy milk 90g
- Water 70g
- Butter 25g
- Tangzhong 120g (all one portion made above)
- Bread flour 330g
- Sugar 26g
- Instant Yeast 3-4g / 1tsp
Steps
- In a bowl, mix together the 100g water and 20g bread flour for the Tangzhong
- Microwave for 15s, then mix. Repeatedly microwave in 10s increment and mix, until it becomes a thick paste.
- Add cold butter and soy milk into the tangzhong to lower its temperature
- Transfer the mixture to the bread pan
- Add the remaining water
- Add flour to the mix, distributing evenly
- Distribute sugar evenly on top
- Distribute active dry yeast evenly on top
- Select mode 1 (regular white bread) and start. It should take 2hr 45mins
- Stop baking when there is 20 minutes left and take the bread out (the normal setting of this machine bakes for too long), placing it upside down on a rack to cool for 15 minutes
- Once it has cooled, slice the bread with a bread knife
Comments
- This recipe makes a soft bread, similar to "shokupan" or milk bread. (Unlike the recipe in the manual which is hard like a baguette)
