Slice-and-bake cookies (Lemon and matcha flavors)

    




Ingredients

Makes 16 bite-sized pieces
  • Unsalted butter 56g
  • Cake flour 85g
  • Powdered (confectioners) sugar 30g
  • A pinch of salt
Lemon flavor
  • Lemon peels 8g
  • Lemon juice 13g
Matcha flavor
  • Matcha powder 4g
  • Milk / Soy milk 13g

Steps

  1. Cream the butter and the sugar together
  2. Add wet ingredients (lemon juice / milk) and mix well
  3. Mix together the dry ingredients (flour and lemon zest / matcha powder) and add to the wet ingredients
  4. When it's mixed well enough, you can start kneading with your hands
  5. Roll the dough into a log / cylinder shape
  6. Refrigerate the dough for 2 hours
  7. Roll out the log again to even it out, and slice into ~1cm thick slices
  8. Preheat oven to 170°C / 338°F and bake around 15 minutes

Comment

  • Next time we can try reducing the butter (perhaps by adding more flour and lemon juice) to make it healthier.
  • 2nd try: Reduced sugar by 12g and it still tastes very good. Reduced the baking time to 12 minutes and it's slightly under; changed the recipe to 15 minutes. Also rolled it out to a sheet and used cookie cutters instead of slice-and-bake, which is simultaneously more effort and more fun. (Also adjusted the entire recipe to use 56g butter to make it half a stick.
  • 1st try: We baked for 20 minutes and it's way overcooked, borderline burnt. Changed the recipe to 12 minutes
