Ingredients
Makes 16 bite-sized pieces
- Unsalted butter 56g
- Cake flour 85g
- Powdered (confectioners) sugar 30g
- A pinch of salt
Lemon flavor
- Lemon peels 8g
- Lemon juice 13g
Matcha flavor
- Matcha powder 4g
- Milk / Soy milk 13g
Steps
- Cream the butter and the sugar together
- Add wet ingredients (lemon juice / milk) and mix well
- Mix together the dry ingredients (flour and lemon zest / matcha powder) and add to the wet ingredients
- When it's mixed well enough, you can start kneading with your hands
- Roll the dough into a log / cylinder shape
- Refrigerate the dough for 2 hours
- Roll out the log again to even it out, and slice into ~1cm thick slices
- Preheat oven to 170°C / 338°F and bake around 15 minutes
Comment
- Next time we can try reducing the butter (perhaps by adding more flour and lemon juice) to make it healthier.
- 2nd try: Reduced sugar by 12g and it still tastes very good. Reduced the baking time to 12 minutes and it's slightly under; changed the recipe to 15 minutes. Also rolled it out to a sheet and used cookie cutters instead of slice-and-bake, which is simultaneously more effort and more fun. (Also adjusted the entire recipe to use 56g butter to make it half a stick.
- 1st try: We baked for 20 minutes and it's way overcooked, borderline burnt. Changed the recipe to 12 minutes
