Lemon Bars (Air Fryer)

    


Ingredients

Makes one 5.5" x 5.5"

Crust
  • 75g all purpose flour
  • 16g powdered sugar
  • 40g butter, melted
  • a pinch of salt
Filling
  • 15g all purpose flour
  • 70g lemon juice
  • 80g sugar
  • zest of 3 lemons
  • 2 eggs

    Steps

    Crust
    1. Mix together 75g of flour, 16g powdered sugar and salt, then add 40g melted butter and press down on the pan
    2. Bake the crust at 350°F for 9 minutes
    Filling
    1. Mix the sugar and the lemon zest, mix well until fully incorporated (You can use a blender to help)
    2. Add in the flour and mix well
    3. Pour in the lemon juice and the eggs and mix well until combined
    4. Pour the filling onto the crust, cover with foil and bake at 325°F for 25 minutes
    5. Dust with confectioner's sugar and serve
