Ingredients
Makes one 5.5" x 5.5"
Crust
- 75g all purpose flour
- 16g powdered sugar
- 40g butter, melted
- a pinch of salt
Filling
- 15g all purpose flour
- 70g lemon juice
- 80g sugar
- zest of 3 lemons
- 2 eggs
Steps
Crust
- Mix together 75g of flour, 16g powdered sugar and salt, then add 40g melted butter and press down on the pan
- Bake the crust at 350°F for 9 minutes
Filling
- Mix the sugar and the lemon zest, mix well until fully incorporated (You can use a blender to help)
- Add in the flour and mix well
- Pour in the lemon juice and the eggs and mix well until combined
- Pour the filling onto the crust, cover with foil and bake at 325°F for 25 minutes
- Dust with confectioner's sugar and serve
