Ingredients
Yields 21 cookies
- 350g all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 180g unsalted butter, room temperature
- 180g granulated sugar
- 25g light brown sugar
- 1 large egg
- 2 tsp vanilla extract
Steps
- Preheat oven to 350°F
- Combine flour (350g), baking soda (1tsp), baking powder (1/2 tsp), and salt (1/2 tsp) and set aside
- Cream the butter (180g), granulated sugar (180g), and brown sugar (25g) together in a large mixing bowl until light and fluffy
- Add one egg and mix until well combined
- Add vanilla extract (2 tsp) and mix until well combined
- Add the ingredients from step 2 and mix until not sticky
- Roll the dough into small balls (~30g each) and flatten them slightly on a baking mat
- Bake in the oven for 10 mins
- Remove the cookies from the oven and allow them to cool for 5 mins before serving
