Soft and Chewy Sugar Cookies


Ingredients

Yields 21 cookies
  • 350g all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 180g unsalted butter, room temperature
  • 180g granulated sugar
  • 25g light brown sugar
  • 1 large egg
  • 2 tsp vanilla extract

Steps

  1. Preheat oven to 350°F
  2. Combine flour (350g), baking soda (1tsp), baking powder (1/2 tsp), and salt (1/2 tsp) and set aside
  3. Cream the butter (180g), granulated sugar (180g), and brown sugar (25g) together in a large mixing bowl until light and fluffy
  4. Add one egg and mix until well combined
  5. Add vanilla extract (2 tsp) and mix until well combined
  6. Add the ingredients from step 2 and mix until not sticky
  7. Roll the dough into small balls (~30g each) and flatten them slightly on a baking mat
  8. Bake in the oven for 10 mins
  9. Remove the cookies from the oven and allow them to cool for 5 mins before serving
