Tapioca flour cheese bread (Brazilian cheese bread)

   



Ingredients

17 pieces
  • 1 egg
  • 50g olive oil
  • 160g soy milk
  • 170g tapioca flour
  • 50g grated parmesan, chopped (or other cheese blend)
  • 15g powdered parmesan (or more grated parmesan and add 1 tsp salt)

Steps

  1. Preheat oven to 400°F (450°F on smaller toaster ovens)
  2. Put all the ingredients together in a mixing bowl and mix well
  3. Transfer the dough to a muffin tin and bake for ~25 mins until golden brown
  4. Once out of the oven, use a fork to turn the bread slightly sideways to avoid moisture being trapped in the bottom part

Comments

  • This is very similar to the Mochi balls recipe, except this is easier and quicker to make. With the higher hydration and the muffin tin, there is no need to hand-knead the dough, and you can just dump all the ingredients into a mixing bowl.
