Yields 4-5 medium (~6") pancakes
Ingredients
- 90g water
- 60g glutinous rice flour
- 60g tapioca starch
- 20g sugar
- 4g baking powder
- 1 egg
- 1 tbsp oil (optional)
Steps
- Mix all the ingredients together in a bowl or large measuring cup. Use a fork or a whisk to stir vigorously to make sure there are no lumps
- Heat up a pan with a tiny bit of oil, then pour in the batter once it's hot
- The first pancake usually takes 2 minutes on each side
- For subsequent pancakes, lower the heat to medium low. Adjust the heat and cooking time based on the desired texture.
