Mochi pancake (gluten free)

 Yields 4-5 medium (~6") pancakes


Ingredients

  • 90g water
  • 60g glutinous rice flour
  • 60g tapioca starch
  • 20g sugar
  • 4g baking powder
  • 1 egg
  • 1 tbsp oil (optional)

Steps

  1. Mix all the ingredients together in a bowl or large measuring cup. Use a fork or a whisk to stir vigorously to make sure there are no lumps
  2. Heat up a pan with a tiny bit of oil, then pour in the batter once it's hot
  3. The first pancake usually takes 2 minutes on each side
  4. For subsequent pancakes, lower the heat to medium low. Adjust the heat and cooking time based on the desired texture.
